Etimologia e Storia di Stilton

1725 in riferimento a un formaggio reso famoso da una locanda lungo la Stilton sulla Great North Road da Londra, il proprietario essendo del Leicestershire, dove il formaggio veniva prodotto.

[W]e pass'd Stilton, a Town famous for Cheese, which is call'd our English Parmesan, and is brought to Table with the Mites, or Maggots round it, so thick, that they bring a Spoon with them for you to eat the Mites with as you do the Cheese. Dal 1969 riservato ai formaggi prodotti nei distretti di Leicester, Derby e Nottingham dai membri della Stilton Cheese Makers Association. Il nome del luogo è nel Domesday Book come Stichiltone e probabilmente significa letteralmente fattoria o villaggio presso un cancello o un ripido pendio.
